As you may know, oatmeal is a great source of fiber – fiber which is heart healthy and great for keeping you satisfied. This recipe combines oats with dried fruit, nuts and seeds for a heart healthy, satisfying portable snack that is sure to keep you going. Feel free to substitute and of your favorite nuts, seeds or dried fruit that you may have on hand.
Makes 9 servings
Ingredients
- 1.5 cups rolled oats
- ½ cup chopped walnuts
- ½ cup dried cranberry
- 2 Tbsp cup pumpkin seeds
- 2 Tbsp ground flax seed
- 1 tsp cinnamon
- 1 tsp kosher salt
- 1.25 cups skim milk
- 1 egg
- 1 tsp vanilla
Preheat oven to 350F. Mix together dry ingredients in a bowl. Mix together wet ingredients then add to dry ingredients and mix (it will be a little wet but that is fine!) Line 9×9 baking sheet with parchment paper and pour mixture in. Bake for about 40 minutes. Let cool and cut into 9 squares. Oatmeal squares will be chewy. Refrigerate until ready to eat. Enjoy!
